Most
Indians love the Chinese dishes with an indian fusion known as the indo Chinese
style. None of these are authentic Chinese dishes. What the Chinese eat is a
real different food than what is served in indian restaurants tagged as Chinese
style. Singapore has a major population
of Chinese. When I first moved to Singapore, I was surprised at their food
which is entirely different from what is called as Chinese in indian
restaurants. Only the high flame and quick cooking style is being adapted from
the Chinese cuisine.
Ingredients
1
cup long grain rice (cook the rice with 1 tsp oil , do not make it mushy,
spread it in a flat plate)
¼
cup shredded cabbage (optional)
¼
cup partially boiled cauliflower (optional)
Fistful
chopped Spring onions white
Few
chopped Spring onions green
½
cup thinly sliced pepper (green , yellow, red any)
1
medium sized carrot shredded
1
tbsp dark Soya sauce
1
tbsp sweet red chili sauce (optional and can adjust) or 1 tsp sugar
1
tsp vinegar
3
garlic pods finely chopped
1/8
tsp pepper pow
1
½ tbsp. Olive oil or sesame oil
Method
(on high flame)
1. Heat oil in a wide
and deep wok, add garlic and sauté till you get an aroma
2. Add white spring
onions, cauliflower,carrot and capsicum, salt. Toss well and fry for few mins,
they should not be fried too much as they loose the crunch
3. Add the rice, green
onions, sauces, vinegar, pepper powder
4. Toss for 2 min.
garnish with green onions.
