I
have already posted a Hyderabadi paneer dum biryani recipe earlier. Today iam
posting a simple paneer biryani recipe quick method. The ingredient list is
long but the cooking method is simple. The taste is different and is less flavour ful from the
dum version. But makes a tasty meal.
ingredients
1
cup aged basmathi rice (soaked for 20 mins)
1
¼ cup water (if needed just sprinkle some water at the end if rice is
undercooked) (adjust the water as per the quality of rice)(remember we use
yogurt too that adds moisture to cook the rice)
1
tsp oil
Salt
to taste
Marination

tbsps ghee (or oil)
¾
cup of paneer cubes (fried in ghee or
oil)
½
cup yogurt
1
tbsp ginger garlic paste
¼
tsp turmeric
1
tsp red chili pow
Salt
to taste
2
tbsps fried onions
1
tbsps finely chopped mint leaves
2
tbsps finely chopped coriander leaves
1
green chili
1
bay leaf
6
green cardamoms
1
black cardamom
6
cloves
3
inch cinnamon stick
2
strands mace
1
star anise
½
tsp shahi jeera (black cumin)
Garnishing
Few
fried onions
Capsicum
chopped (fried)
Fried
paneer (if you desire)
Mint
and coriander leaves

1. Marinate paneer
with the marination ingredients and set aside
2. Add oil to water
and bring it to a boil, add the rice and
cook till it is half done
3. Add the marinade to
the rice, mix well. Cover with a tight lid and cook till the rice is fully
done. This takes around 8 mins on a low flame. Do not open the lid atleast for
15 mins after you off the flame.
Garnish
with garnishing ingredients.
Tips:
* do not reduce oil or ghee, does not taste and looks good
* Be careful when you use the water for rice , consider yogurt too as moisture for cooking rice. else your rice becomes mushy
