                Paneer Masala Recipe | Easy Paneer Recipe is a simple no butter no cream recipe and is not a restaurant style too, can be prepared in just 20 minutes (includes the preparation time). it makes a good healthy curry for chapathi , roti , pulav, fried rice, dosa. It can even be enjoyed with steamed  rice & a bowl of rasam.  It is a semi dry curry and can even be turned to a gravy dish by adding besan or corn flour mixed with water. This time I just prepared the semi dry curry which I will be sharing.  Are you wondering about the presence of spring onions and capsicum in almost every veg curry recipe of mine. yes I do use and it’s the impact of north Karnataka cusine (where I was born and brought up) we use both these veggies a lot. Since I have grown up eating this way, I cannot even imagine some of my curries without these 2 special veggies.

 Spring onions have many health benefits like they help in reducing and controlling the blood sugars and cholesterol, avoids stomach discomforts, helps in building immunity and fight against asthma.

Ingredients
1 ¼ cup of diced paneer
¼ cup of tomatoes cubed
1 ½ cup of veggies (can add boiled potatoes too )
        onions diced and layers separated
        spring onions chopped to 2 inch length
        capsicum thinly sliced
1 sprig curry leaves
¼ tsp of cumin
pinch of turmeric
salt to taste
1 tbsp grated ginger (can add as you desire)
1 tsp red chili powder
1 tsp coriander powder + pinch of cumin pow  or garam masala
¼ tsp pepper pow (adjust as per your desire)
Fistful of coriander leaves
lemon juice ( optional if your tomatoes are not tangy, use it)
oil as required

Method
1.   Heat a pan with little oil and fry the paneer on a medium flame till golden. Set aside.  If you are using store bought frozen paneer, soak it in hot water for few mins and drain. I never do the soaking part as I have never used store bought frozen paneer. I always make at home.

2.   Heat the same pan with little more oil, add curry leaves and cumin, sauté for a min
3.   Add ginger and fry till you get a good aroma
4.   Add tomatoes, salt and turmeric. fry till the tomatoes turn mushy
5.   add red chili powder and  coriander powder + cumin (or garam masala) , mix well

6.   Add the rest of the veggies, toss well to coat the masala to the veggies
7.   Add paneer, drizzle some more salt and oil, toss well. cover and cook for 3 to 5 mins.
8.   Add coriander leaves. cover and off the heat

Set aside for atleast 20 to 30 mins before you serve.
