| Baked Pasta Muffins Recipe |
Impressed
with Raji’s Baked Pasta Muffins Recipe, I could not resist and tried it
immediately. I followed her recipe almost except that I went with my choice of
veggies and topped with crumbled corn flakes.
½
cup small macaroni pasta
½
cup + 2 tbsps grated mozzarella cheese
½
cup of crumbled cornflakes
2
to 3 tbsps. olive oil
¾
cup of chopped veggies (I used red and green capsicums, spring onions, green
chilies, carrot)
1
½ tbsps. Finely chopped mint or any Italian herb
Pepper
powder or chili flakes (optional)
Salt
to taste
Method
1. Cook pasta as per
the instructions on the pack. drain and set aside to cool
3. Chop the veggies. add
salt and pepper. mix
4. Preheat the oven at 170 C

5. Grease the muffin
tins, add the pasta cheese mix
7. Add the cornflakes
evenly
9. Bake for 15 to 18
mins

Wait
for 5 mins and scoop them out
