Baked Pasta Muffins Recipe

Impressed with Raji’s Baked Pasta Muffins Recipe, I could not resist and tried it immediately. I followed her recipe almost except that I went with my choice of veggies and topped with crumbled corn flakes.

1 ½ tbsps. Finely chopped mint or any Italian herb
Pepper powder or chili flakes (optional)
Salt to taste

Method
1.   Cook pasta as per the instructions on the pack. drain and set aside to cool
2.   Mix grated cheese with the cooled pasta

3.   Chop the veggies. add salt and pepper. mix
 4.   Preheat the oven at 170 C
5.   Grease the muffin tins, add the pasta cheese mix
6.   Add the veggies and then the cheese for binding the corn flakes
7.   Add the cornflakes evenly
8.   Drizzle some olive oil

9.   Bake for 15 to 18 mins
10.                Wait for 5 mins and scoop them out
