Kerala chicken fry



I got this Kerala Chicken Fry recipe from a malayali friend, who was at home for lunch last week. We made this and it tasted great. i had no step wise clicks, so made it yesterday again as i really loved the taste. Chicken is cooked in coconut milk and roasted with grated coconut to get a flavorful & delicious dish .


Ingredients
400 gms Chicken
3 tbsps coconut oil
½ tsp cumin
2 to 3 pinches of kerala garam masala(at the end of the post I have mentioned what I used)
1 sprig of curry leaves
1 green chili
½ cup of shallots thinly sliced
3 tbsp grated coconut (grind with 120 ml water and extract milk)
2 tbsps  grated coconut (for frying)
marination
1 tsp coriander pow
1 tsp red chili pow
1/8 tsp turmeric
1 tbsp ginger garlic paste
1 tbsp vinegar

Method
1.   Marinate chicken with marination ingredients and set aside for atleast an hour.

 2.   heat oil in a tawa, add cumin allow it to splutter
3.   add curry leaves and shallots, fry till the shallots turn translucent

4.   add the marinated chicken, fry for 5 mins on a medium heat
 
5.   pour the extracted coconut milk, cover and cook till the  chicken is fully done

6.   Add kerala garam masala, adjust salt. With the lid open, cook till all the liquid evaporates 
7.   Add grated coconut and fry on a high flame till the chicken looks dry and begins to caramelize. 

  
8.   Fry for atleast 5 mins to caramelize the onions and coconut

Kerala garam masala (dry roast and powder)
3 “cinnamon stick
1 tbsp. cloves
2 tbsps. fennel seeds
1 tsp. green cardamom
1 tsp. pepper
1 to 2 strands of mace
Pinch of nutmeg powder
1 star anise
