Indian lunch box recipes for kids

Finding ideas for kid's lunch box is one of the challenging tasks for many mums, especially if the kids are fussy or demanding.  As mums we are more interested to load their boxes with nutrition and want to make it interesting for the kids. Iam a strict vegetarian which it comes to packing Lunch box, I do not pack anything that has been prepared with eggs or meat, as I totally do not like the idea of packing these as the food is stored for several hours before consumption. I have put together some of my recipes that are good for lunch boxes, all these are Indian only that can be made in less than an hour.  Based on my experience, I have categorized as roti, rolls, rice and breads and i have shared how these could be made more interesting for fussy eaters. There are no pasta and noodles recipes, since I do not think they remain good or tasty after few hours. I will be updating this post further.

Kids are different some like to eat only rice items as they are lazy to chew roti /chapathi or bread and they feel rice can be finished faster. While some like to eat only finger foods like roti or roti rolls or sandwiches.  My 8 yr old son has been skipping his lunch and bringing it back home untouched for the past 5 months as I was not packing him chapathi. After my domestic help left to her country on a long leave, five months ago, I am unable to make these roti early morning since I find it difficult to make roti and sabzi together and breakfast as we hardly eat breads for Bfast. my toddler shouting on top his voice for attention, with all these I did not put an effort to make the roti rolls. After a short survey talking to other mums,  I have understood that most kids love to munch on some finger foods like roti rolls, sandwich  or something of that kind, so that they could rush to play in the leisure . So I am back to my schedule that I use to follow for his lunch earlier with the rolls, which I will share in the coming days.

Easy Paratha Recipes : These are easy to make and need no side dish or any other veggie. Some of them do not need much kneading and soaking time too, yet they turn out to be mouth melting.Isn’t this easy?

Suggestion: These do not need any side dish, but if wish to include more veggies, you can use these to roll up some steamed or sauted veggies. yogurt or a salad too makes a good side for this. i never pack any sides for these as my kid does not prefer to.Below is the list of easy paratha recipes

Beetroot Paratha

I have not posted this. Adding cooked pureed beetroot to the flour, yields soft rotis. you can add coriander leaves too while kneading. These do not taste great, but my kid loves these as they melt in the mouth. Do not add water to the beetroot while pureeing. The dough must be slightly sticky as shown in the pic.

spinach paratha (palak)
have not posted this one too, puree the spinach leaves and use while kneading.will update when i make these next time.
