Andhra chicken curry | kodi kura (koora) is of a gravy consistency and Andhra chicken fry| Kodi vepudu recipe is a restaurant style dry roasted chicken. Today’s Andhra Chicken iguru | kodi iguru is a dish of
semi-dry consistency and chicken is usually cooked in its own juices without
adding any water. Either tomato or yogurt is used. The key to making this dish
perfect , tasty and spicy is to use enough tomatoes or yogurt and a good amount
of garam masala. Today’s recipe is with tomatoes. Usually nut paste or poppy
seeds or sesame seeds paste is not required to prepare this. However it depends
on personal choice. It goes well with steamed rice and onion raitha.

gms of chicken with bone or boneless
½
cup ripe tomatoes (chopped)

to 12 mint leaves chopped finely

cup to 1 cup of onions

to 2 green chilies

tbsp ginger garlic paste

tsp red chili powder

tsp turmeric
1
tbsp. of garam or biryani masala powder (adjust the quantity if using store
bought, I use 1 tbsp homemade biryani masala powder)

tbsps oil
Coriander
leaves chopped

sprig curry leaves

tsp cumin / jeera
Method
1. Heat oil in a deep
pan, add cumin, curry leaves and green chills, when they begin to crackle
3. Add mint and fry
till you get an aroma
5. Add tomatoes, salt
and turmeric. Fry till the tomatoes turn fully mushy. do not cover and cook the
tomatoes, it spoils the entire dish
8. Add garam masala
and nut paste if using, I do not use any nut paste.
9. Simmer the flame and cover the pan with a lid and let it cook for 4 to 5 mins.
by then chicken should begin to release moisture.

there is no moisture released, add very little water, as little as 40 to 50 ml.
mix well and continue to cook till soft and tender. (Some times chicken does not release moisture for unknown reason, add water only in that case)
