Super flavorful chickpea curry
Soak 1 cup chickpeas (chole) overnight. Drain and pour 1 cup tea decoction
Cook or pressure cook until soft and tender but not mushy
Saute whole spices in oil for 30 to 60 seconds
Saute 1 tbsp ginger garlic paste
Saute 2 medium chopped onions
They turn golden to light brown
Add 1 cup tomatoes, salt and turmeric as required.
When the tomatoes are mushy, add 1 tbsp chole masala powder, ½ tsp red chili powder and garam masala
Saute the masala very well until aromatic
Pour the chickpeas along with the stock and 1 cup water. Simmer for 20 mins
Add 1 tbsp kasuri methi & transfer to serving bowl. Garnish with ginger juliennes
Serve Chole with bhatura, puri, naan or with rice.
