Rinse and soak 1 cup urad dal for 4 to 5 hours

Beat the batter until light and add 1 small chopped onion, 1 spring curry leaves, 1 inch ginger and 1 to 2 green chilies

Wet your fingers and take a portion of batter

Gently shake your fingers over the hot oil, to drop the vada

Fry until crisp and golden

Remove them to a plate and serve hot with coconut chutney
