Banana bread recipe video – Simple quick banana bread recipe with video and step by step photos. I don’t bake often but whenever we have overripe bananas I bake banana bread, banana muffins, banana cake and moist chocolate banana cake. This banana bread recipe is one of our favorites and has been tried by me so many times and has always turned out great. If you are a beginner do check out the video I have shared below.

This banana bread recipe uses a single egg so the results are too good and is lighter than a eggless banana bread. This is a no fail recipe, even a beginner can bake this with wonderful results very easily.

Flour:
This works good with whole wheat flour (atta) or plain flour (maida) and even with half of each. I have used whole wheat pastry flour which yields the same results as using half regular whole wheat flour (atta) and half plain flour. Earlier I have also made this using only regular whole wheat flour, the difference is a slightly denser banana bread.
I have used organic turbinado sugar, any kind of sugar just works good here. The color of the cake may be lighter if made using white sugar. Since I used the turbinado sugar the banana bread turned out to be lightly golden to brown.

Banana bread
For best results follow the step-by-step photos above the recipe card
Ingredients (US cup = 240ml )
- 1 ½ cups flour or 180 grams , (plain flour, whole wheat flour or whole wheat pastry flour)
- 2 bananas , ripe (medium, about 6 inches long)
- 75 to 80 grams butter or 1/3 cup melted
- ¾ cup sugar (organic)
- 1 egg ,large , beaten
- 1 tsp baking soda
- 1 Pinch salt
- ½ tsp cinnamon (optional)
- 1 tsp vanilla extract
Instructions
Preparation
- Sieve together flour, cinnamon, salt and baking soda. Set this aside.
- Grease a 8 by 4 inch loaf pan with butter.
- Beat the egg and set aside.
- Preheat the oven to 160 C for atleast 15 mins.
- Mash the bananas very well either with a masher or puree them.
- Add sugar and vanilla. Mix well until sugar dissolves.
- Add butter and beaten egg.
- Mix well.
- Mix together flour in 2 parts with the wet ingredients just until combined. Avoid over mixing and make sure there are no lumps.
Making banana bread
- Transfer the batter to the greased pan.
- Bake for 60 minutes or until a skewer inserted comes out clean. You may need to adjust the baking time by 5 to 10 mins depending on your oven. But keep an eye after 55 mins. Mine was done exactly after 60 mins.
- Transfer the banana bread to a rack.
- Cool completely and cut with a bread knife.
- Banana bread can be served with milk or tea.

Actually, I had planned to make eggless chocolate cake for my husband’s birthday which is today. But couldn’t get any ingredients due to lockdown. Hence now planning to make eggless banana bread with limited ingredients available.
Please clarify.. so, for an eggless banana bread..it’s ok if I don’t have vanilla extract or essence.
To compensate for the taste of this, do I need to add half tsp cinnamon powder & half tsp cardamom powder or either of them.

I suggest using 3/4 tsp of cinnamon alone. I haven’t tried using both. So not sure how it will turn out.

Not sure if cardamom will work well here. Without vanilla, banana bread will have the smell of egg. You can try with half tsp.

I haven’t posted a simple bread recipe yet as it needs lot of kneading which is really hard. I do make it sometimes using a stand mixer. I will share the recipe in sometime. Yes banana bread is good to enjoy as a dessert / sweet like a cake.

It is good to refrigerate. It keeps good for about a week in fridge. I usually pop it in the microwave for 40 to 60 seconds just before serving.

Sorry akka 1 more thing. I used white sugar only but color is same as yours . Was heat more?
No Sorry dear! I guess the golden color comes from the bananas and not from sugar. 160 to 180 C is the right temperature. For me 180 doesn’t work out well so I always bake at 170 but this cake at 160 C. If the heat is more, the bread/cake will turn brown on top with a hard crust while inside it will still be moist like batter/ dough. Keeping this in mind you can adjust the temperature for any recipe depending on your oven. Hope this helps

It keeps good for about a week in fridge. Just pop it in the microwave for 40 to 60 seconds to warm it before serving. Yes you can bake it at 320 F

Sure rama u can make it ongas.just place any Patalion gas for 20 mum on low flame and then open a lid and place is container of cake on it and cover it and leave it for 30 min perfect cake will make

Hope you cooled the cake completely. The cake gets good cuts only if sliced using a serrated knife or bread knife.

Okay got it. Thanks for trying. I am happy to know the recipes are used. Yes this banana bread and even many other cakes can be baked in the aluminium cake box.. You will be able to bake very good and soft cakes. Just that you have to be cautious about the cooking timing.
For this recipe, just bake it until a skewer or a fork inserted comes out clean. Don’t follow the 60 min bake time I have mentioned in the recipe. The baking time depends on the flame of your gas stove. Hope this helps. Do share with us how it turned out.
