Carrot Halwa Recipe - Gajar ka Halwa Recipe
Carrot halwa or Gajar ka halwa is one of the most popular Indian sweet dishes that is served in parties. It is easy to make, except the grating part. One thing I love about this dish is we get to eat a good amount of carrot in the form of this sweet. I haven’t posted much of sweet recipes that can be made quickly, instantly with no prior preparations. So iam sharing this one. We all come across special days like birthdays, anniversary, get together or festivals and we may not have much time to prepare anything special. Your heart doesn’t let you go off without preparing anything. In such situations, to kill the guilt I prepare dishes like this that come handy. I usually stock up a couple of milk maid tins for such days. This halwa gets done very quickly, with condensed milk, need no additional sugar. If you have a food processor, you are the lucky one, you need not grate it.You can follow the same recipe for Delhi Gajar too.
If you do not have condensed milk, you can use milk and sugar just in place of CMilk. Adjust the sweetness as desired.

Pumpkin Halwa | Kaddu ka Halwa using paneer
1 kg of grated carrot
1 tin of milk maid (397 gms , use little less for moderate sweetness, I usually use a few tbsps. lesser)
Generous pinch of green cardamom powder
Few tbsps. ghee (optional) but adds flavor
nuts as you desire (you can use cashews, blanched almonds, pistas,raisins)
1. Heat a pan with ghee, add the grated carrot and fry till you get a nice aroma. usually takes 2 to 3 mins on a medium heat
2. Reduce the flame, pour the condensed milk setting aside little, add cardamom. mix. Check the sweetness. Pour the rest to get the sweetness you desire.
3. Simmer till the condensed milk is nicely blended with carrot. Keep stirring to prevent burning. usually takes 5 to 6 mins
4. Roast the nuts in ghee and garnish.
